Finally! An excellent banana bread recipe!

While I had some luck with a fancy lemon glazed coconut version a while back, I have struck out twice in the last year with banana bread.

I gave it one last chance tonight facing a few over ripe bananas and decided to wisely go to one of my favorite recipe sources, Simply Recipes this time.

Well, the third time’s a charm – this Basic Banana Bread with Chocolate Chips is sweet, moist, and pretty perfect.

The chocolate is my own addition, and I added a handful of chips after adding and mixing in the flour. You can adjust and add to your own taste (maybe some coconut, walnuts, cinnamon?)

It’s really simple and there’s no need for any mixers beyond your own hands and a wooden spoon.

Serious Eats doesn’t steer me wrong when it comes to recipes and when I saw salmon being described as “custardy” and looked at the list of ingredients for this Slow-Roasted Salmon with Cabbage, Bacon, and Dill I knew I had to give this one a try.

It’s actually quite easy just with a longer cook time than most salmon recipes but so worth it. Tasted as good as I’d expect at a restaurant.

This Spaghetti with Crab Sauce may not be too much to look at and the limited recipe list may indicate a lack of flavor, but it will surprise you.

Hearty and delicious, this simple meal focuses on the crab, which I have never tried in a tomato based sauce before.

Mario Batali calls for fresh Dungeness Crab, but, come on – it is still yummy with the canned stuff.

I was invited to attend a Charity Cookie Exchange (more on that later) and wanted to make something resembling one of my favorites: the Cornflake Cookie from Momofuku Milk Bar. I found a make at home version on the blog Making House.

While I can’t claim they were quite as divine as the rich, exquisite Momofuku ones, I was very pleased with the chewy mix of textures and tastes. I would make these again and can now that I have all the ingredients. (Nice to have mini marshmallows in the house – gives one an excuse to make hot cocoa).

While these are pretty easy to make I have one word of advise: refrigerate the dough before baking – the recipe says it’s optional, but even with hard cold dough, these babies spread like crazy so also make sure to leave room between cookies.

Yams seem to only get a walk on role for dinner during Thanksgiving and then, it’s always candied and covered in marshmallows – not that I object, I love that dish, but I wanted to try something different and savory with the root for dinner the other night and after pages of candied yam recipes found this one for Balsamic Roasted Yams. It’s an easy prep and only 40 minutes to bake. I love any roasted vegetable, but particularly root vegetables and particularly in the fall, so this was perfect.

This Bucatini a Limone recipe is simplicity in a dish. From Mario Batali, it originally called for Tagliarini, a thin flat noodle, but I tried it with my new favorite pasta, Bucatini. This is a prefect recipe that most people can make with available ingredients in a pinch (at least, I find I always have dried pasta, butter, parm and lemons).

Easy Breakfast

This is my own recipe, an eggy breakfast take on the classic Caprese Salad – Caprese Eggs. I first fried the grape tomatoes, sliced in half, in a tablespoon of butter, salt and pepper, and a couple splashes of balsamic.

Once they broke down a little, I added four scrambled eggs, cooking slowly on low heat. Last I added a thick slice of mozzarella chopped up and cooked until it was melted and the eggs were set. Next time, some basil would be a nice addition.
