The ideal cold soup for summer months. This is one of the simplest recipes for Vichyssoise I found and it is delicious and satisfying. A side of fresh sourdough bread completes a perfect meal.

Easy to make, this is a very basic recipe ripe for experimentation. I added bit of paprika to mine because it goes so well with hard boiled eggs and mayo in deviled eggs – and it was a yummy touch. Can be served on its own, over greens, or on a bun.
