It seems weird that I chose to make this recipe with the assumption that it would probably be kind of gross, but I'm glad I'm so irrational sometimes because it wasn't gross at all, but instead extremely delicious.

Recipes »Bourtheto
Bourtheto is a traditional Greek cod stew is tasty and filling without being too heavy. I added some spicy chorizo and I highly recommend the addition for fans of the flavorful sausage, it mixed well with the gentle flavor of the fish and the tomato based broth. A good warm weather dinner.

I guess for some reason I thought tortilla soup was an americanized dish but when we visited mexico recently it was on nearly every menu. This recipe is extremely tasty and easy and hits the spot on a warm evening when you need to be fulfilled, but can't imagine eating heavy. Recipes »Red Lentil Stew

After a long cook time, enough for all the flavors to combine into a rich, tasty stew, Jim couldn't eat more than a couple bite-fulls of lentils. But don't let that discourage you. This is a healthy and delicious recipe.

Recipes »Oaxacan Tacos
Restaurant worthy. The key is frying the tortillas (I used flour rather than corn), which softens them up. The rest is simple seasoning and fresh ingredients. I love this recipe.

Recipes »Sesame Crusted Mahi Mahi
There is actually nothing embarrassing about this recipe except that I failed to capture it's tastiness in this terrible photo. You'll have to take my word for it that the sauce (in which I substituted nori for shiso) is to die for.
