kabsaNational Dish of Saudi Arabia

One of the benefits, and believe me there are many, to having a generous friend who loves to cook is that you’ll get emails like this:

Subject: Kabsa Anyone?

“Ok, so it’s almost “Souper Sunday” time of year, but before it gets too cold out, I’ve been meaning to make a giant serving of Kabsa. What’s Kabsa you ask? Why its the national dish of Saudi Arabia of course. I came across it last week doing a wikipedia search on Mecca since it was in the news. And let me tell you, it looks delicious. Its chicken, rice, raisins (i get this awesome Persian kind of this place near my work that taste like no raisin you’ve had) some nuts and maybe some other stuff, I’m searching the internet for the best recipe. So anyone down for some this Sunday afternoon/evening (perhaps around 5 or 6)? Let me know if anyone is up for it, so I know how much I need to make.”

As a usual non-lover of raisin foods, I have to say I was a believer after eating this. Super delicious.

Recipes »Pate and Cornichon Sandwiches

pate cornichon sandwichClassic French Sandwich

Cornichon and Pate is a classic French sandwich. We started it all off right with the supremely excellent chicken liver pate from Marlow and Daughters. It’s a simple delight that’s simple to make: just spread a thin layer of butter and dijon, then a thicker layer of pate onto crusty French bread. Add sliced cornichons, and you’re all set.

Recipes »Buttermilk Oven-Fried Chicken (Worst Recipe)

Some things (sadly) are just meant to be fried. While someone somewhere I'm sure has been able to achieve the golden crispness that I always see in photos of baked 'fried' chicken recipes, it won't be with this particular recipe.

I made this for friends, and while the chicken itself was moist (the only complimentary thing that could be said), it looked like I had found some paste and half-heartedly tried to spread it across a plain, bland chicken breast with my finger. The guests were polite, and I've since redeemed myself with some awesome chili.

Recipes »Brussel Sprout Chips

brussel sprout chips From the week of May 4th:

Turning a brussel sprout into a “chip”,?a snack that even my veggie fearing husband devoured in seconds, is brilliant. I first got wind of this recipe on the great food blog Serious Eats who in turn found it on Real Food for Real People (which looks like it could be a great spot for more yummy recipes, honey buttered popcorn, anyone?). I loved these so much I made them twice in one week.

RUNNERS UP:
Vaca Frita
Szechuan Green Beans with Ground Pork
Brown Butter Cookies
Larb Gai
Homemade White Castles
Corned Beef and Cabbage

Recipes »Chicken Chili with Black Beans

Okay, so there's nothing scary about this wonderful Chicken Chili with Black Beans (in fact, it's so good it even convinced a friend who claimed to hate chili to ask for seconds), but it's so warming and perfect for after a night of trick or treating or a Halloween party that I thought I'd include it this week.

Plus, you could easily call it brain soup or something to make it more festive. Just be sure to add chipotle peppers in adobo sauce – that's the magical extra ingredient.

Recipes »Pasta with Squash, Sausage and Goat Cheese

It was hard not to be too gluttonous with this recipe of Pasta with Squash, Sausage and Goat Cheese. Another excellent dish from Use Real Butter, this is scrumptous and was absolutely perfect for the ungodly freezing temperatures we have been surprised with lately. The original recipe calls for summer squash and rigatino but we adapted with butternut squash and macaroni. Call it the winterized version and love it.

Recipes »Fish Flavored Pork

I loved my dinner tonight! And not just because Jim cooked while I didn't lift a finger – it was also truly delicious. Sure, a recipe called Fish Flavored Pork might turn some folks off, but they'd be missing out on a complex, spicy dish that would go well with some steamed rice and a beer. We subbed porcini for tree ears and ground pork for strips.

I found it on Use Real Butter, a lovely food blog with more recipes that I'm curious to try.

Recipes »Chicken Tacos

With my recent work days stretching heart-wrenchingly late into the evening, it's lovely to come home to some chicken tacos, a meal Jim prepared with a little help from Ortega (he likes the crispy shells and ketchup-like sauce) and this tangy lemon/limey recipe from Allrecipes (though he claims he didn't use any measuring devices and eyeballed the whole thing).

Recipes »Carrot Cupcakes

carrot cupcakesCarrot cake is in the air. Both my friends Grace and Mike have baked up the veggie goody this past week. Mike used a recipe from The Barefoot Contessa that to my joy omits those pesky raisins. The frosting calls for obscene amounts of confectioners sugar and butter.

Recipes »Fennel, Orange, and Olive Salad

insalata de finocchi, arance e olive nere or, Fennel, Orange, and Olive salad seems like an unlikely combination, if not downright gross. But the mix of peppery, citrusy, and salty is actually quite yummy and refreshing. Throw on a bit of pecorino romano cheese like Shaun did when he so graciously served this to us at a recent Italian dinner night. This recipe comes again from his favorite Roman food blog, Italialicious.
